your question was related to the form of Kirtan which you didn't understood. Don't feel bad. I really wanted to reply to your question so as to let you know what they might have been doing. Usually sikh sangat from Akhand Kirtani Jatha follows the pattern you described. they would start doing naam simran, chanting " Waheguru " but after sometime you have hard time following up with what's happening and off course the tabla makes you really curious.

I have been to some function as well as one of my uncle, he's from AKJ California, that's why came to know abt this all. hope that helps u out.
