Sat Sri Akal!

People will always make excuses and rationalizations until the day the give up the body for the things they do and believe. You can take virtually any world scripture and twist it to prove some point wether it is of God or not.

If in your heart, Waheguru tells you not to eat meat, then don't eat meat. We don't need to wait for instructions from others. Waheguru will always guide us.
It has been my experience, especially with the vegetarian subject that the more you try to convince people, even with a lot of facts, they will not change. The best way to show that a vegetarian diet is of a higher spiritual caliber is to be a shining example. Be such a Gursikh that when others look at you they see your radiance. Be such a Gursikh that others want to be like you. People are always watching what we do. If they are smart, they will notice how a vegetarian diet affects one's spirituality.

Try not to consentrate so much on this external thing. Once when asked what was his religion, Guru Nanak said that his only religion was the Naam. Try not to be distracted by the scenery on the way to Waheguru. Meditate on the Naam. Encourage others to meditate on the Naam. Eventually they too will feel the need to eat vegetarian.

Wahe Guru Ji Ka Khalsa! Wahe Guru Ji Ki Fateh!
