why is it that some sants and babas have the number 108, 109 or 111 written in front of their names?

where did this practise come from and how does it relate to Gurmat?

Sat Siri Akaal. This is a new one for me. I do not know where it is from. I cannot answer your first question, but I can tell you that it is not part of Gurmat. The only 'sant' or 'baba' for an observant Sikh today is Siri Guru Granth Sahib. No numbers in front of our Guru, are there? While a sant or baba might be very learned and a wise teacher, s/he is not SGGS, the Guru of Sikhs, and the "baba" too, since many of us call a home Gurdwara "Babaji's room".
