As Sikhs, I would agree with you that the same tenet of our faith that teaches us not to cut our hairs or alter our body would preclude a Gursikh from tatoos or piercing or anything similar. I, too, have seen apparently devoted Sikhs with an "Ek Ong Kar" tatoo. Instead of saying that they were 'wrong', though, I would give them some benefit of the doubt and say that they may have been misguided or lacked an understanding of that tenet of Sikhi when they did what they did.
